Thailand Rock Climbing Located in Southeast Asia, Thailand is bordered by Cambodia, Burma and Laos in the north and Malaysia in the south. The shape of the country is somewhat similar to Italy, and you’ll find similar differences between northern and southern Thailand that you do in Italy. For rock climbing enthusiasts, the south of Thailand is where the action is. The rock formations in Thailand are almost universally limestone. The level of climbing can be as simple as bouldering or as challenging as tackling over vertical cliffs. This makes Thailand a popular rock climbing destination since it has a little something for everyone. Krabi Located on the southern section of the “tail” of Thailand, Krabi has a wide variety of rock climbing challenges. Most of the climbs in this area are of the pre-bolted sport route variety. There are literally hundreds upon hundreds of climbs with difficulty levels from beginner to multi-pitch knuckle crushers. The beauty of climbing in Krabi is…well, the beauty. While you might have visions of jungles and mosquitoes when thinking of Thailand, Krabi is an area of a different sort. Most of the climbs have been set up on cliff faces on the beach. Being natural capitalists, the Thai’s have built hotels, bars and so on at these locations. As a result, you can literally climb a multi-pitch route for five hours, cool off with a swim and then have a beer. If there is such a thing as a rock climbing heaven, many feel Krabi is it. Before you cash in your savings, keep in mind that Thailand is a seasonal vacation spot. If you go during the wet season, there is a good chance you’ll just end up sitting around drinking beer. While that isn’t too bad, you’ll go crazy looking at the climbs that are so close, but oh so far away. Generally, you want to head to Thailand from late November through maybe April. The summer months tend to be both incredibly hot and wet. Make sure you pull up forecasts for the area before booking a trip. Flying to Thailand is inexpensive, but flights are incredibly long with stopovers. Still, it is all worth it once you experience Thailand rock climbing. Cowboy Short Ribs2 small fresh or dried hot red chiles, each about 1 1/2 inches With a mortar and pestle, or in a small bowl with the back of a spoon, crush the two red chiles, garlic, nutmeg and 1/2 teaspoon of the black pepper together. Add the sugar and soy sauce, and pound the mixture to a smooth paste. Set aside. Pat the short ribs completely dry with paper towels and season them on all sides with 1 1/2 teaspoons of the salt and the remaining 1/2 teaspoon of black pepper. One at a time, roll the short ribs about in the flour to coat them evenly, then vigorously shake off the excess flour. Melt the lard over moderate heat in a heavy 5- to 6-quart casserole at least 10 inches in diameter. Brown the short ribs in the hot fat, five or six pieces at a time, turning them frequently with tongs and regulating the heat so that they color richly and evenly on all sides without burning. As they brown, transfer the ribs to a plate. Pour off all but about 2 tablespoons of the fat remaining in the casserole and add the onion slices. Stirring frequently, cook for about 5 minutes, until the onion slices are soft and translucent but not brown. Add the tomatoes and the reserved chili paste and cook briskly, stirring from time to time, until the mixture is thick enough to hold its shape almost solidly in a spoon. Return the meat and the liquid that has accumulated around it to the casserole, stir in the beer and bring to a boil over high heat. Reduce the heat to its lowest setting, partially cover the pot and simmer for about 2 hours, or until the short ribs are tender and show no resistance when pierced with the point of a small knife. We have to break down carbohydrate sugars, such as the starch from corn. Create it into “Mash”. Grind or crush the feedstock (corn, soybeans, wheat, etc…). Then dilute and add an enzyme (alpha amylase) to turn the mixture into a liquid. Once liquified a second enzyme is added(glucoamylase) to convert the starch into sugar. (If the source is mainly sugar, i.e…rotten fruit, molasses, etc…, the conversion step can be skipped. Step Two: . . . Fermentation Add yeast and make it into a beer (wine) type solution. Step Three: . . . Distillation The beer (wine) type solution needs to be run through a still to extract the alcohol from the solution. Step Four: . . . Filtration The ethanol now needs to be filtered to get rid of excess organic volatiles. Step Five: . . . Dehydration The ethanol needs to be “dried”. After the distillation process there will be a certain amount of water in the ethanol you have just created – this can be dried running the ethanol through Zeolite a readily available product for drying ethanol. Step Six: . . . Ethanol Into e85 Now simply convert the pure ethanol into e85 by adding 15% unleaded gasoline to your ethanol. e85 is nothing more than 85% ethanol mixed with 15% gasoline. Making your own ethanol will require some initial investment, but the rewards will be very, very beneficial. You can make your own e85 for right around a $1.00 a gallon if you buy the corn and for about $.60 a gallon if you grow your own corn. e85 Flex Fuel Vehicles are becoming more and more popular as the gas prices continue to rise. e85 is defiantly going to be a major relief for the United States fuel problem. You may even be driving a flex fuel vehicle now. Many newer models are equipped to handle both gasoline as well as e85 ethanol. The best way to check is to look in your owners manuel, check in the fuel door for the e85 sticker or contact your dealer and have them run your vin number to see if you vehicle is compatable. When visiting Fayetteville, North Carolina, it’s nice to visit the familiar chain restaurants, but it’s also interesting when you go to dine at the local eating establishments. There are many choices to choose from. Whether it’s chicken, barbecue, fish or something else, the local restaurants are sure to please. Cape Fear BBQ & Chicken specializes in of course, barbecue and chicken. This local restaurant is the only one in Fayetteville. They offer small and large barbeque plates. The prices are cheap, with a small barbecue plate and two sides at $5.29. Their specialty is the vinegar barbecue; the vinegar they use on it is very light. You may have to acquire a taste for it if you’ve never consumed this type of barbecue. There are a choice of sides, including baked beans, Brunswick stew, cole slaw and potato salad. The barbecue plate also includes hush puppies. They’re located at 523 Grove Street in Fayetteville. Rude Awakening (yes, that’s the name of the place) is located at 227 Hay Street in the historic part of downtown Fayetteville. It is a two story brick building that has been in the area since 1914. Before Rude Awakening took over, it was Johnson’s Café and after that, was called Brady’s Soda Shop. At least it stayed in the “café” establishment. Rude Awakening opened in December 1999 as Rude Awakening Coffee House. The owners, Bruce and Molly Arnold were allowed to renovate with the blessing of the Historic Preservation Office. The storefront, including the leaded glass panel was not touched during the renovation. Their coffee menu includes Drip Coffee, Expresso, Cappuccino, Latte, Breve, Americano, Mocha and Steamer. They also offer specialty flavored cappuccinos: Cherry Vanilla, Milk Chocolate Chip, Cherry Bomb, Symphony, Berry Rama, Grasshopper and the house specialty, Chocolate Cream and Toffee. In addition to their specialty coffees, Rude Awakening also offers breakfast and lunch. Their cakes are rich in flavor. Some of the offerings include Chocolate Chunk Cheesecake, Amaretto, Key Lime, Tiramisu and Chocolate Nemesis, just to name a few. 316 Oyster Bar & Seafood Grill opened in 1998. It has only one location (Fayetteville). They are known for serving quality food, including seafood and steaks. Since the food is prepared after you place your order, you may have to wait a little longer to receive your meal. The restaurant prides itself by cooking you a fresh meal instead of having it sit under a heat lamp. Items from the menu include: fresh fish, crab, steaks, lobsters, pasta, raw oyster, steamed seafood, and salads. Their seafood is fresh and delivered daily from the coast. For added preservation, the seafood is cut and prepared on site. 316 Oyster Bar accepts major credit cards (Visa, MasterCard, Diners Club, and American Express). Their operating hours are Monday – Thursday, 5PM – 10PM and Friday/Saturday 4:30PM – 11PM. The restaurant is closed on Sundays. It looks like Anheuser-Busch and Miller aren’t the only breweries around. The Mash House Restaurant & Brewery is on the list, too. Even if people don’t eat at this Fayetteville establishment, some of them will drink their award-winning beer. The brewery and the beer alone have made The Mash House one of Fayetteville’s preferred eating establishments. They even have a video on their website that shows the brewery and briefly describes in a five-step process how their beer is made. Signature beers such as Stout, Brown Porter and Hoppy Hour India Pale Ale are on the menu. In 2001, Hoppy Hour India Pale Ale was a silver medal winner in a brewery contest. In addition to their brew, the restaurant also offers appetizers, soups, salads, sandwiches, burgers and entrees which include meatloaf, chicken and pasta. The Mash House offers assorted desserts, including the legendary campfire staple, S’mores. Just because you’re visiting another city doesn’t mean you can’t try something new. These can range in price, and some tea houses are really tourist traps whose main goal is to milk you of your money, so be careful. You can get a free tea demonstration at most Tenrenfu tea houses which are located throughout the city and at some malls. In Beijing, that is now leading the country’s cultural revival, also remember that a tea can be sipped while watching martial arts and acrobatics. What the hell is this? Some teahouses have recently reappeared showing a variety of Beijing Opera and traditional shows and there you will be served delicious selections of tea and cakes too. Although Western influences have been embraced to transform traditional Chinese art forms into contemporary pieces, it’s still possible to get a taste of some traditional theatre, such as story-telling to musical accompaniment, magic shows and acrobatics daily at the Lao She Chaguan, Da Wancha Building and at the Tianqiao Happy Teahouse. Good coffee is hard to find in most parts of China, although addicts have a place to retreat now that Starbucks has at least 50 spots in the capital, most situated around shopping malls and in commercial districts of the city. The most popular Chinese beer, which is also quite good, is Qingdao. You can get it for 10-20 yuan or just 2-3 from a street vendor whilst the main beer brand of Beijing is Yanjing (10-15 yuan at restaurants, 2 yuan on the street). Wine made in China are considered not drinkable by most foreigners, but it is also true that it’s not their traditional drink. Just give them 10 years and they will come up with it too! If you really want to have some good wine, you can try Great Wall that is the most popular local brand, or get foreign products, such as those from the US, France, Italy, Australia, and Chile, but you will find them in more upper scale restaurants. Looking for hard liquors? Try Bai jiu (white liquor) that comes in a large variety everywhere for very cheap prices and should be avoided if you want to have a clear mind for your visit on the next day. Mao Tai is one of the more famous brands but it is quite expensive. If you wish to have a hint on what to eat and drink together, don’t forget Beijing is famous for its Roast Duck. It is well served at many restaurants with thin pancakes, plum sauce and slivers of scallions and cucumbers. You dip the duck in the sauce and roll it up in the pancake with a few slivers of scallions and/or cucumbers. The end result is a mouth-watering combination of the cool crunchiness of the cucumber, the sharpness of the scallions, and the rich flavours of the duck. Well served with a cool Qingdao Beer! Beijing is also known for its lamb hotpot (shuàn yáng ròu), which is a funny cook-it-yourself affair in a steaming pot in the centre of the table featuring a savoury, non-spicy broth. To play it safe and satisfy everyone, you can request yunyáng for a pot divided down the middle, with spicy broth on one side and regular broth on the other. On a last but useful note, keep in mind that during Olympic games everything is going to be much expensive from food to accommodation and comparable to western rates. Do not fear to haggle: is essential especially in touristy markets, shopping areas, etc. Example youth hostels that used to sell a bed night for 3 euros, now they sell it for 20-30 euros. So, what about International hotel chains?? Worse than worse. Miang KhumMiang Kum is an appetizer of sorts. It is commonly enjoyed as a snack, or as a complement to beer. (Any beverage will do. ) Miang Kum is normally served on a large platter, with several items, all separated. Basically, one would start with a leaf of spinach or other leafy vegetable, pinch it so that it forms into a small spoon-like shape. Then you would add it shredded dry coconut, red onion, diced lime, peanuts, dry shrimp and maybe a pick kee noo or two. (Pick Kee Noo are those amazing spicy little Thai chiles. ) Finally, add in a dollop of sweet sauce and voila! Enjoy. 1 coconut Let’s start with the coconut. Break open the coconut, and remove the meat (it’s the white part-duh!). Then shred it into small thin pieces. Take the shreds and stir them in a hot pan until golden brown. (On medium heat this should take about 20 or so minutes). Now for the sauce. Using a small or medium size pot, heat the sugar until melted. It should form the consistency of syrup. Then add in the shrimp paste. Be sure to add in the shrimp paste when the sugar syrup is boiling, and that to only cook it for a few minutes or else it will burn. That’s all the cooking. Now here’s how to serve it…Use several small condiment containers or small saucers. Place each individual ingredient into a saucer of its own. Then using a large platter, place the spinach leaves in the middle, and arrange the saucers around the spinach in a manner that suits your individual aesthetic taste. How to eat…Grab a leaf. Fill it with a small portion of each ingredient. Eat. Enjoy. Drink some beer. The teams may not have been decided yet, but it is not like it really matters, no matter who plays most eyes will be glued to the game. With the exception of the fans of those teams that are playing most people who watch the SuperBowl are just hoping for a good game. One thing people like to do to make the game more interesting is an office football pool. Make sure whatever types of foods you offer the foods were not prepared in a rush. If you are planning to order food to be delivered you may want to rethink your plan. One of the busiest nights of the year for a take out restaurant is SuperBowl Sunday, and in a rush to get all the orders delivered on time sometimes food can be undercooked, so you may want to either keep it simple like pizza or make your own food. Beverages can be a bigger problem then the food. Most men will usually drink some beer while watching the game, but unless each person brings their own beer you risk running into someone who does not like the selection you have provided, also because the game is on a Sunday people may want to stay sober, because of work the next day. So make sure to have a good selection of beer, hard liquor and non alcoholic soft drinks. You can always ask you friends when you invite them for the game what they like to drink, then assuming no one picks something so out of the ordinary you should be able to find an acceptable mix of drinks for everyone. As for Snacks I recommend a large selection or the basics chips, pretzels and maybe popcorn or even peanuts.
